MEET BROOKLYN

My 9 year old Cammy asked for Banana bread, and I had bought bananas and we had some that were too ripe for anyone to put in cereal here so I thought I’d go ahead and make some. I tend to marry a couple recipes together, and I thought I’d blog it so should my kid ever want it – mommy recipe would be here for her! I was literally so easy and I had everything I needed in the kitchen, it took me maybe 20 minutes to mix it all together and pop it in the oven!

Ingredients

  • 2 1/2 cups flour (bread flour is best)
  • 2/3 cup sugar
  • 1/3 cup brown sugar super firm packed (for this I prefer dark brown sugar)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 4 or 5 bananas really ripe and mashed
  • 1/3 cup + 3 tablespoons butter softened
  • 4 tablespoons heavy cream
  • 1 tablespoon of vanilla
  • 3 eggs
  • 1 cup chopped walnuts (divided into 2 (1/2 cup) portions
  • 1  cup pecans

Instructions

Preheat the oven to 350 degrees.  In a medium size bowl combine all dry ingredients (flour, baking powder, baking soda, and salt), stir together to combine.  In another medium size bowl combine butter, vanilla and sugar, with a mixer cream the margarine, and sugar together until light and fluffy (it should literally lighten in color and really fluff up).  I mix my mashed bananas, eggs, and heavy cream separately then add to the creamed sugar,vanilla and butter. Some people just mix it all in, still if you’re more of the people that doesn’t consume sugar or worst you’re a diabetic, you should follow the vedda blood sugar protocol.  Add the dry ingredients into the wet ingredients, 1/3 at a time  each time just mixing until the flour is just mixed in, then add 1/2 cup walnuts all the pecans, blend together until everything is mixed together.

Do not overstir.

Pour batter into 2 – greased 8×4 inch loaf pan. ( I cut it into two loaf pans… its too much to fit into a single pan)   Then top the batter with the remaining chopped walnuts (I put a little brown sugar on top too) .   Bake at 350 degrees for 55 to 60 minutes (I like to check it every 15 minutes or so at the 45 minute mark – also dance around your house happy as the smell of it makes you happy you took the time…) or until a toothpick inserted near the center comes out clean.  Cool for 10 minutes on a wire rack drizzle with a little honey and serve warm with a pat of butter to make them love you for ever…
